2-2A - management knowledge, responsibilities, reporting

Upon request, PIC was unable to provide proper documentation for employee health agreements. Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food. PIC: EHS informed PIC that all employee health agreements need to be kept on file, at the food service establishment, and be made readily available during inspections.
2-2B - proper eating, tasting, drinking, or tobacco use

EHS observed employee personal drink being stored on a food prep surface. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: Employee removed water bottle from the food prep area during the inspection. EHS also informed employee to refrain from consuming food/beverages in the food prep areas.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed dish soap, being used as hand soap, in one of the restroom units. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. COS: During the inspection, PIC removed dish soap and replaced it with the proper hand cleansing soap.
15C - nonfood-contact surfaces clean

Observed mold-like build-up inside of pre-rinse sprayer nozzle. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. PIC to clean the inside of the pre-rinse sprayer nozzle and implement a clean schedule to ensure future build-up will not occur.
