Observed several stacks of clean dishes to stored upright. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored:
(i) In a self-draining position that allows air drying; and
(ii) Covered or inverted. PIC will look into an alternative method, placing plastic barrier on shelves, to ensure that the plates are covered and protected against overhead contamination.

Observed hand sink, located next to prep sink, to be leaking when not in use. All physical facilities shall be maintained in good repair. PIC will put in a request to ensure that the sink can get repaired.

No certified food service manager was observed in the facility. Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection.

Observed black reside along the walls close to the ware-wash machine. Clean nonfood contact surfaces of equipment frequently enough to preclude accumulations. PIC to clean walls.

Observed bags of trash and litter throughout the dumpster area. A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items and clean. PIC to clear dumpster area of excess trash and debris.

Observed a mop stored in a position to not be able to air-dry. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. COS: PIC voluntarily changed the position of the mop during inspection.
