Observed clean dishes to be stored in an upright position where overhead contamination could occur. Also observed clean cups to be stacked while drying. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored:

(i) In a self-draining position that allows air drying; and

(ii) Covered or inverted. COS: Dishes were voluntarily placed in an inverted position and cups were placed side-by-side to ensure proper drying occurs, during the inspection.
