Observed clean dishes to be stored in an upright position where overhead contamination could occur. Also observed clean cups to be stacked while drying. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored:
(i) In a self-draining position that allows air drying; and
(ii) Covered or inverted. COS: Dishes were voluntarily placed in an inverted position and cups were placed side-by-side to ensure proper drying occurs, during the inspection.

Observed both temperature gauges, on the ware wash machine, to be broken. In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. PIC stated that a new ware-washing machine was being installed within the next few days.

Observed black residue inside of the ice machine. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC to drain, wash, rinse and sanitize ice machine at end of shift.
