4-1A - food separated and protected

Second Consecutive Repeat Violation Observed raw animal foods not properly separated from each other in reach-in cooler (RIC). Observed improper horizontal separation of raw animal foods and ready-to-eat foods in RIC. Raw animal foods shall be stored in a manner that prevents cross contamination. Corrective Actions: EHS rearranged raw animal foods to prevent cross contamination. PIC and staff were educated on proper food storage and the existing proper food storage sign was referenced.
11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed raw pork in a cooling state while fully covered preventing heat transfer. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:
(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and
(ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Corrective Actions: PIC uncovered raw pork to allow heat transfer. See temperature log for cooling curve.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wiping cloth stored on prep surface without sanitizer solution available. Cloths in-use for wiping counters and other equipment surfaces shall be: Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). Corrective Actions: PIC made new QAC sanitizer solution at proper concentration.
