Observed beer cheese held past its discard date in base of operations. All foods that are prepped or cooked must be date marked for 7 days and discarded after the seven days. CA: PIC discarded food.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed containers not air dried before being stacked together for storage in base of operations. Dishes and utensils must be air dried before being stacked together. CA: PIC rewashed containers and allowed them to air dry.
