6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed queso, pico, diced tomatoes, and sour cream in prep top cooler at front line being held in excess of 41F. Advised PIC that TCS foods must be held at 41F or below and leaving tops of cooler open when not in use can lead to higher temperatures. PIC discarded affected foods.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed freezer with buildup of condensate. Advised PIC that physical facilities must be kept in good repair. PIC called repair technician during inspection for repair.
