Informed PIC that even though lunch service was ongoing and prep top was in use, TCS foods still needed to be kept at 41 degrees or lower and prep top needs to be closed as much as possible to keep foods at the correct temperature. PIC emptied out both top and bottom of prep top cooler and removed it from service to allow unit to cool back down. COS

Manager removed bowl once informed that was not okay. 3 comp sink in bar area also used partially as hand sink and partially to rinse glasses. Advised manager to either label one of the compartments as a hand sink and to take all glasses to other 3 comp in main kitchen or have a hand sink installed in bar area.
