Observed order of storage of raw eggs in carton on solid shelf above plastic wrapped salads. It is the PIC's responsibility to ensure employees are visibly observing and verifying delivered foods as they are received to determine that they are from approved sources and are placed into appropriate storage locations. See department provided education.

Alternate dishwash plans not observed in place as evidenced by kitchen substitute was unaware of the requirement for separation of wash and sanitizing steps. Observed 2 compartment in use without use of provided countertop basin. CA: Provide written procedures per code and educate staff.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(l) - handwashing sinks location/placement (pf)
Kitchen is missing a permanent hand sink to replace mobile hand sink. CA: Provide plumbed in solution to use of this temporary sink in the same area. Code requires handwashing sinks are located to allow convenient use by employees in food preparation, food dispensing, and warewashing areas of the kitchen.

Paper towels observed at dish sink instead of hand sink. Code requires that a sink used for food preparation or utensil washing, or a service sink or curbed cleaning facility used for the disposal of mop water or similar wastes, may not be provided with the handwashing aids and devices required for a handwashing sink.
