Observed interior surface of dish machine in need of cleaning due to food build up. Manager was advised to increase the cleaning frequency of the dish machine to twice a week.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(l) - removing dead or trapped birds, insects, rodents, and other pest (c)
Observed a dead insect on the clean surface of the 3 compartment sink and two smaller insects (also dead) on the floor next to the mop sink. Previous pest control reports state that treatment is conducted for the establishment monthly for cockroaches and ants. Manager was advised to continue to clean up dead insects, especially after treatment.

Observed dust accumulating on the air vents in the main kitchen.
