4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed quat sanitizer concentration at 0ppm inside of the 3rd compartment sink. After further investigation, it seems to be a clog in the sanitizing line for the 3 compartment sink. PIC was advised to manually dispense sanitizer and to utilize the test strips to monitor the concentration (200ppm-400ppm). PIC noted the issue in their EcoLab log to have service done on the sanitizer dispenser.

Observed apples displayed on the buffet line with no protection against contamination. PIC wrapped apples.

Observed ceiling leaks in the dining room by the patio door. Hotel manager will provide a plan of action for the dining room leak.
