16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(h),(i) - approved sewage disposal; system; other liquid wastes and rainwater (p) (c)
Observed wastewater from back hand sink being disposed onto the floor. This was due to food debris that had collected on the mesh net that was covering the air gap. The district manager removed the mesh net and cleaned the floors. Wastewater is now being disposed directly into the floor drain.
511-6-1.06(4)(h),(i) - Approved Sewage Disposal; System; Other Liquid Wastes and Rainwater (P) (C) (h) Approved Sewage Disposal System. Newly constructed or converted fixed food service establishments shall dispose sewage through an approved facility that is:

A public sewage treatment plant if connection to such system is available within two hundred feet (200’) of the property line, or available in a public right-of-way abutting the property of the fixed food service establishment ;P or
-
An individual on-site sewage disposal system that is sized, constructed, maintained, and operated according to law. P and
-
In the event of an individual on-site sewage disposal system failure, a connection shall be made to public or community sewage disposal system if such system is available within two hundred feet (200’) of the property line, or available in a public right-of-way abutting the property of a fixed food service establishment. P
(i) Other Liquid Wastes and Rainwater. Condensate drainage and other non-sewage liquids and rainwater shall be drained from point of discharge to disposal according to law.

Observed pans wet nesting in the cabinets underneath the steam well.

(a) Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

Shall be air-dried or used after adequate draining before contact with food; and

May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Observed rusted walk in cooler shelves. Observed food debris underneath the grill.

17C - physical facilities installed, maintained, and clean

Observed walk in cooler floor with food debris and standing water by the entrance of the door. Observed mold-like substance on the wall of the walk in cooler by the door of the walk in freezer. Observed debris on the floor in the dry storage area.
