12C - wiping cloths: properly used and stored

Observed wiping cloths stored in murky/grey sanitizer water. Manager changed out the chlorine sanitizers.

- Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be:
(i) Maintained dry; and
(ii) Used for no other purpose.
- Cloths in-use for wiping counters and other equipment surfaces shall be:
(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and
(ii) Laundered daily.

Cloths in-use for wiping surfaces in contact with raw animal foods shall be kept separate from cloths used for other purposes.

Dry wiping cloths and the chemical sanitizing solutions in which wet wiping cloths are held between uses shall be free of food debris and visible soil.

Containers of chemical sanitizing solutions in which wet wiping cloths are held between uses shall be stored off the floor and used in a manner that prevents contamination of food, equipment, utensils, linens, single-service, or single-use articles.

Single-use disposable sanitizer wipes shall be used in accordance with EPA-approved manufacturer’s label use instructions.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed excessive condensation leak in the reach in cooler in the back of the kitchen causing water to pool at the bottom of the cooler. Raw eggs and waffle batter were observed in the reach in cooler in good condition. Manager was advised to remove the food items and discontinue the use of the reach in cooler until repairs have been made. Please send an email to keundra.golden@dph.ga.gov of work order for the reach in cooler as well as a complete work order when the repairs have been made.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed exterior surface of clean cups with coffee residue from the coffee machine stored above the cups. Manager was advised to ensure that cup trays are completely pushed under the counter to prevent food, beverages, and debris on contaminating the cups.
511-6-1.05(7)(a)2,3 - Equipment, Food/Nonfood-Contact Surfaces, and Utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (C) 2. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations.
- Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
15C - nonfood-contact surfaces clean

Observed red sticky residue in the cabinets where single use cups, lips, and bowls are stored in the main kitchen area. Observed rusted shelves in the reach in cooler towards the back of the kitchen in need of replacing or repainting with food grade paint.

17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed excessive food and debris build up on the floors under the grill and dish machine areas in the kitchen. Floors in the dry storage area and walk in cooler also need to be cleaned due to debris.
