Observed lettuce (48 F), Sliced tomatoes (54 F), and American cheese (55 F) above 41 F on the ice bath. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F. Per the person in charge the food items were on the ice bath for less than an hour. The ice had melted and the PIC had not had the opportunity to replace the ice as they were busy. The food items were moved to the the walk-in cooler to cool. The PIC removed the food items from the WIC and placed the items on ice bath once they reached 41 F. Keep food items on an ice bath to ensure the items remain at 41 F or below.
