6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed all TCS items (50F-52F) in the walk-in cooler being held above 41F. The ambient air temperature of the unit is 50F. Person in charge (PIC) states that the unit was 32F at 10:30am but does not have a temperature log. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. PIC must discard all TCS items in the unit including all of the boxes of ice cream mix.
12B - personal cleanliness

Observed employee cooking hamburger patties and prepping food while wearing a bracelet on their wrist. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Employee removed their bracelet.
