Observed the dish machine only reaching 146F during the final rinse cycle from the plate thermometer and the machine gauge for final rinse not operable. The dish machine temp log had not been filled out. Hot water sanitization temperature for mechanical warewashing is 160F surface temperature. Person in charge (PIC) turned off machine and set up the three compartment sink. An informal visit will be had within 3 business days to check status of the machine. Until it is repaired, keep using the 3 compartment sink.
