Call maintenance and have them come out and service the machine. In the meantime, use the three-compartment sink to wash, rinse, and sanitize items. An informal visit will be had in 3-10 business days to check on the dish machine.

Observed the sanitizer hose disconnected on the dishwashing machine. Person in charge connected the hose to the sanitizer nozzle, but there were no sanitizer being dispensed. After being cleaned, equipment food contact surfaces and utensils shall be sanitized as specified by the unit's data plate, 50 ppm of chlorine solution. Have the unit repaired. Utilize the three compartment sink to wash, rinse, and sanitize food contact surfaces and utensils.
