6-1A - proper cold holding temperatures

Observed several time/temperature control for safety foods being cold held above 41 F inside the reach in cooler: American cheese (43 F), Raw Hamburger (46 F), Chicken filet (51 F). The ambient air temperature of the reach in cooler is 41 F. The unit increases in temperature as soon as the door to the unit is opened as it is near the fryer station. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F. COS: Food items were discarded as they were held in the unit overnight. Have the unit serviced/repaired.
