6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several time/temperature control for safety (TCS) foods holding above 41F in the reach-in cooler below the prep top unit. The ambient temperature of the unit is 47F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safe food shall be maintained at 41°F or below. Employee discarded the food. Do not use the unit for TCS foods until it is repaired.

Observed two gallons of milk in the reach-in cooler with a best by date of May 18. Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. Employee discarded the milk.
