Observed cooked pork tamales thawing on the countertop. Except as specified in paragraph 4 of this subsection, time/temperature control for safety food shall be thawed: Under refrigeration that maintains the food temperature at 41°F or less. Employee moved tamales to the reach cooler to complete the thawing procedure.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed food handler prepping foods while wearing wrist jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Employee removed the wrist jewelry.

Regulation: 511-6-1.06(5)(n) - covering receptacles (c)
Observed the lid on the outside grease receptacle open. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered: Contain food residue and are not in continuous use or with tight-fitting lids or doors if kept outside the food service establishment. Employee closed the lid.
