11A - proper cooling methods used: adequate equipment for temperature control
Regulation: 511-6-1.04(6)(e) - cooling methods (pf, c)
Observed a container of white rice with a prep date of 5/22/26 tightly covered inside the walk-in cooler in the cooling process. Also observed a container of traditional wings that were prepared this morning prior to my arrival tightly covered inside the walk-in cooler. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Person in charge removed the lids of the food containers to allow the food items to properly cool.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed an employee actively prepping food without a hair restraint in the main kitchen. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. Put on hair a restraint.
