Observed time/temperature control for safety (TCS) food items below 135F inside the warmer cabinet: Rice (129F), Brown Gravy (129F), and mashed potatoes (120F). Ambient air temperature of the unit was 86F. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F or above. Rice and gravy was reheated, but mashed potatoes were discarded due to being prepped in individual containers. The unit's ambient air temperature increased to 142F before leaving.
