6-1A - proper cold holding temperatures

Observed pepperoni (44°F) shredded mozzarella (49°F) and sliced Ham (46°F) inside the prep top cooler. Ambient air temperature of the unit is 39°F. Per person in charge the food items have been inside the unit overnight. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. Foods were discarded. The proximity of the oven may be causing the increase of the foods inside the unit. Recommended keeping the lid on the prep top cooler during non peak time to maintain the food items.
