Observed reduced oxygen fish completely thawed within its packaging inside the chef's cooler. Reduced oxygen packaged fish that to be kept frozen until time of use shall be removed from the reduced oxygen environment: Prior to its thawing under refrigeration that maintains the food temperature at 41°F or less. Remove fish from packaging and inform staff on proper handling of reduced oxygen packaged fish.

Observed 0 parts per million (ppm) of sanitizing solution in the sanitizer buckets that came from the pump from the three compartment sink. Sanitizer buckets are to have the appropriate amount of sanitizing solution in order to clean and sanitize food prep areas and food contact surfaces. Person in charge (PIC) states that the pump at the three compartment sink has been acting weird so someone will come out today to check it out. PIC has manually made sanitizer in the sanitizer buckets with the proper concentration.

Observed garbage debris scattered on the ground outside near the dumpster area. Trash/garbage is not allowed to be on the ground. The debris must be stored inside the dumpster. Clean the area and store debris inside the dumpster.
