Observed an employee wearing a watch while preparing food. Except for a plain ring, such as a wedding band, food employees may not wear jewelry, including medical information jewelry, on their arms and hands while preparing food. Retrain employees.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(d),(e) - warewashing equipment, cleaning frequency; warewashing machines, manufacturers' operating instructions (c)
Observed the rinse gauge on the dish machine providing an inaccurate rinse temperature (120 F). A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions. Please have the gauge on the machine repaired.

Observed a heavy buildup of grease located on the ground around the grease receptacle in the outside storage area. Grease, as well as garbage, is not allowed to be on the ground. Power wash and clean the area.

Observed a lid missing on one side of the dumpster, which causes the dumpster to not remain closed. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside the food service establishment. Have a dumpster lid placed on the dumpster, or have the dumpster company provide a new dumpster.
