Observed an employee wearing a watch while preparing food. Except for a plain ring, such as a wedding band, food employees may not wear jewelry, including medical information jewelry, on their arms and hands while preparing food. Retrain employees.

Observed the rinse gauge on the dish machine providing an inaccurate rinse temperature (120 F). A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions. Please have the gauge on the machine repaired.

Observed a heavy buildup of grease located on the ground around the grease receptacle in the outside storage area. Grease, as well as garbage, is not allowed to be on the ground. Power wash and clean the area.

Observed a lid missing on one side of the dumpster, which causes the dumpster to not remain closed. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside the food service establishment. Have a dumpster lid placed on the dumpster, or have the dumpster company provide a new dumpster.

Observed the hot water temperature (69°F) at the right-hand sink in the women's restroom and the hot water temperature (70°F) at the left-hand sink in the men's restroom below 85°F. A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF (29.4 ºC) through a mixing valve or combination faucet. Please have a plumbing representative from a reputable company to provide service to the sinks.

Observed chlorine sanitizer solution at the dish machine between 100-200 Parts Per Million (ppm). Chlorine sanitizer solution must be 50 ppm at the dish machine. Please have the machine service to allow the proper chlorine sanitizer solution for sanitizing equipment and utensils.

Observed build up of grease located on the grease receptacle in the outside storage area. Soiled receptacles and waste handling units for refuse, recyclables, and returnables shall be cleaned at a frequency necessary to prevent them from developing a buildup of soil or becoming attractants for insects and rodents. Clean the grease receptacle.

Observed heavy build-up of grease located on the ground in front of the grease receptacle. Grease as well as garbage is not allowed to be on the ground. Please power-wash and clean the area.

Observed several cracked raw shell eggs inside of its original package container inside of the walk-in cooler. Eggs shall be received clean and sound and may not exceed the restricted egg tolerances for U.S. Consumer Grade B as specified in United States Standards, Grades, and Weight Classes for Shell Eggs, AMS 56.200 et seq., administered by the Agricultural Marketing Service of USDA. Corrected on Site (COS): Eggs discarded.
