6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed sliced ham inside the reach-in cooler behind the grill above 41F. Also observed liquid eggs (47F) and raw shell eggs (44F) on an ice bath next to the grill above 41F. The ice was melted, perhaps there was not a sufficient amount of ice. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F. Gave guidance on proper use for ice bath.
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed sausage gravy (120F) at the steam well below 135F. The food item was double-panned, perhaps that caused a drop in temperature. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F or higher. COS: PIC removed the food item and had an employee reheat the item on the grill to at least 165F before placing back inside the steam well.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed food debris in the handwashing sink near the tea urns in the expo area. A handwashing facility may not be used for purposes other than handwashing. PIC removed food from handwashing sink. Educate employees on use of handwashing sinks.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed an employee water bottle next to customer items inside the reach-in cooler near the grill. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: PIC removed the water bottle and relocated the item to an appropriate area.
