Obtain beard restraint to prevent cross contamination with food products.

Observed a bag of chicken nuggets inside the reach in cooler near the fryers with at temperature of 61°F. Ambient air temperature of the unit is 62°F. Per person in charge the chicken nuggets were inside the unit since last night. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F or below. Food discarded.

Observed half and half (46 F) inside of the reach-in cooler near the front counter area. The ambient air temperature inside of the reach-in cooler at 49 F. All cold hold Time/Temperature Control for Safety (TCS) foods must be 41 F or below. Corrected on Site (COS): Half and Half discarded and other TCS foods moved to another reach-in cooler. Please have the reach-in cooler serviced/repaired.

Observed the surface temperature at the high-temperature dish machine reaching (145.9 F) below 160 F. Hot water mechanical operations by being cycled through equipment that achieves a utensil surface temperature of 160ºF (71ºC) as measured by an irreversible registering temperature indicator. Please have the dish machine to be serviced/repaired as soon as possible. Use the three-compartment sink to wash, rinse, and sanitize equipment and utensils.

In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. Purchase an irreversible registering temperature indicator as soon as possible.
