Observed multiple pans of beans in dense covered containers cooling in walk-in cooler. Person in Charge (PIC) instructed to cool food in shallow uncovered containers. Pans uncovered and cooling properly.

Observed customer drinking glasses tightly stacked while wet next to soda machine.
