Observed only prep dates on ready to eat (rte) held longer then 24 hrs. Ensure discard date (7 days with day 1 being prep date) is clearly marked on date labels.

Observed 2 containers of ham marked prep 12/22/24 but still in cooler at 1/2/25. Items well past 7 day discard date. Items disposed.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed small to go cup/containers being used and reused as scoops. Do not reuse to go items. Use scoops with proper handles stored with handles out of contact with food.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed accumulations of rust, debris and grease on wire rack storage shelves and racks in coolers. Clean shelving to prevent accumulations by 1/11/25.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damage to, or accumulations on, walls around prep areas, dish line, mop room and reach in freezer. Observed damage to cove base and accumulations on floors at dish line. Repair surfaces to be easily cleanable . Clean surfaces at a frequency to prevent accumulations.
