Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
As previously noted, both hand sinks blocked by heavy supplies (boxes of cooking oils) or equipment (grill prep cart). Ensure all hand wash sinks are readily accessible for staff handwashing. COS.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed accumulations of liquid and food debris in empty cooler drawers under cook line. Clean surfaces at a frequency to prevent accumulations by 9/30/21.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed stained ceiling tile over warmers, and several damaged cove base tile (cook line, dish line and prep line). Clean and repair surfaces to provide a clean and cleanable surface by 9/20/25.
