Observed ice scoop laying inside the ice machine. Keep scoop stored handle up inside the ice machine or place it inside a covered storage container outside of the machine. PIC placed scoop back on holder.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed 5 boxes of frozen shrimp and a bag of chicken wings being unthawed on back counter. Explained 3 methods of unthawing, 1: under running water less than 70 degrees, 2: unthaw inside a cooling unit, 3: if its part of the cooking process.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no test strips being used at the 3-compartment sink. Advised manager to obtain test strips for sanitizer solution to properly monitor concentration.
