11D - thermometers provided and accurate
Regulation: 511-6-1.05((2)(l) - tmd, ambient air & water - accuracy (pf)
Observed thermometer in WIC indicated 40 degrees F and measured food stuffs in WIC measured 37 degrees F. The ambient thermometer is off by 3 degrees F. CA: Replace ambient thermometer with an accurate thermometer.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(d) - clean-in place equipment (cip) (pf, c)
Observed more than one day's buildup of food particles on inside hinge surfaces of waffle makers. Observed floors in need of mopping in order to remove food particle build-up beneath equipment. Observed splashed/smeared food debris on sides of equipment and prep tabletops. CA: Clean all non-food contact surfaces often enough to prevent food particle buildup. Design of body material of waffle maker needs to be smooth and easily cleanable. General detailed clean-up needed on all equipment non-foods contact surfaces and maintain a cleaning schedule often enough to prevent food debris build-up on any surface of equipment.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed mops were not hanging for storage. CA: Hang mops from storage rack so that mops will dry. Drying rack needs to be repaired so mops can be hung up for proper drying.
