Observed ambient temperature on multiple RIC that indicated temperature to be above 41 degrees. Observed shredded cheese and sour cream to be held above 41 degrees.CA: Turn down thermostats in RICs to hold food stuffs at or below 41 degrees.

Due to Instructor requesting this critical inspection, Inspector is marking out of compliance due to the number of infractions during inspection. A PIC is assigned in each class, but due to the array of infractions, the PIC duties are not being performed.

Observed that ware wash machine does not have a sanitizing cycle nor a means of holding or applying a sanitizing solution.CA: Acquire and install a sanitizing cycle to the ware wash machine.

Observed wiping cloths in small red buckets to be slightly damp indicating that they were never laundered and hung up to dry. Also observed sanitizing solution buckets were empty or the one that had solution was well below required concentration for quaternary sanitizing solution.

Observed sanitizing solution buckets (red) buckets that were empty and appeared not to have been used in a while stacked up right side up on an uncovered storage rack. CA: Store sanitizing solution buckets not in use properly. Either inverted or in covered storage.
Observed horizontal surfaces on number two fryer to have oil/grease splatter on surfaces while not in use. No class being taught at time of inspection. Also noted food particles in fryer baskets hanging on drip racks. CA: Clean surfaces of equipment and maintain cleaning schedule set by the school staff.
