Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed temperatures of food (Tomatoes, Onion and cheese) in prep-top cooler to be above required holding temperature. CA: Lower the thermostat of prep top cooler to hold foods at or below 41 degrees F. COS: PIC lowered thermostat temperature and discarded current contents of prep-top cooler.

Observed floors throughout kitchen and adjoining food prep room to have a visible buildup of grease and food debris. CA: Clean floors and maintain a cleaning schedule that will prevent a buildup of grease and food debris.
