6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed salad, butter, and ambient cooler temp at 48 degrees F to 50 degrees F in glass reach in cooler and lower compartment. C/A - have cooler serviced and move all other TCS foods to another cooler. COS - manager had all TCS food in cooler dumped since it had been in cooler longer than 4 hours.
