observed food item in walk in freezer stored uncovered. ca-cover all stored food items. repeat.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
observed chemical agent at dishwasher not dispensing. CA-repair dispenser and in the meantime utilize manual dishwashing for all food contact items. observed wash rags sitting on tables and on top of equipment. place in sanitizing bucket while not using. COS-removed and placed in sanitizing bucket.
6-2 - proper date marking and disposition

observed items (chorizo, pastor, and salsa birria) in walk in cooler past the listed dispose by date. COS-items removed and disposed of.

observed cheese container and salsa being prepped sitting on floor of kitchen. COS-items placed on prep tables and removed from floor.
