Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
observed the hot water dishwasher not reaching sanitizing temperature of 180degrees F after using 2 different temperature pucks and a probe, reached 149 degrees F. ca-repair
