8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Sanitizer (chlorine) concentration too high (200 ppm) in 3 comp sink. Chemical sanitizers shall meet requirements specified under 40 CRF 180.940 (chlorine 50-100 ppm) COS: Water added to correct concentration.
12D - washing fruits and vegetables
Regulation: 511-6-1.04(4)(g) - washing fruits & vegetables (pf)
Raw beef in vegetable sink. Raw fruits and vege. shall be washed in water, in a sink for that purpose only.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(6)(p) - warewashing equipment, determining chemical sanitizer concentration (pf)
Test strips expired. Concentration of sanitizing solution shall be accurately determined by using a test kit.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Build up of residue on griddle. Non-food contact surfaces shall be cleaned at a frequency to preclude accumulation.
