6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Butter (46 deg f), lettuce (49 deg f), cheese (43 deg f) cold holding in reach in cooler by ice machine above temps of 41 deg f. Folded eggs (46 deg f) in reach in cooler by cook station cold holding above 41 deg f. Milk (45 deg f), egg (46 deg f), beef (44 deg f), bacon (49 deg f), lettuce (47 deg f), and tomato (48 deg f) cold holding in walk in cooler above 41 deg f. CA: All tcs food cold holding shall be maintained at 41 deg f or below. COS: Butter, lettuce, cheese, folded eggs, bacon, and tomatoes were discarded during inspection. All other food cooling. Delivery had just come, and the door was propped open for around 2 hours. Spoke to the manager on duty about keeping the door closed during delivery, possibly starting key drop delivery, or keeping the freezer door open during delivery. Freezer door was opened during inspection to allow the cooler to drop in temperature. Cooler by the ice machine has a leak, and has a do not use sign on it, and will not be used until it is fixed. All food was taken out of it during inspection. Before inspection was over all food in walk in cooler had cooled down to 43-41 and the ambient temperature was at 41 deg f.
