6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed chicken, milk in the walk in cooler that have been sitting there sincce 10th of May , were cold holding at 45 degree fahrenheits. CA: Temperature control for safety food shall be maintained at 41 degree Fahrenheits or below. COS: Milk and chicken were voluntarily discarded.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed sanitizer bucket positioned close to a container of flour. CA: Toxic materials shall be stored so they cannot contaminate food,equipment,utensils,linens and single-service and single-use articles. COS: Milk and chicken were voluntarily discarded.
