Observed raw chicken above raw shell eggs in walk in cooler. Observed raw shrimp above cooked chicken in walk in cooler. Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display. COS: PIC rearranged items in walk in cooler based on cook temperature.
12C - wiping cloths: properly used and stored

Observed wet wiping cloth stored on countertop in kitchen prep area. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). PIC needs to keep wet wiping cloths in sanitizer solution.
14B - utensils, equipment and linens: properly stored, dried, handled

Observed stainless steel pans above three compartment sink stacked while wet. Equipment and utensils shall be allowed to completely air dry before stacking. COS: PIC separated pans out to allow them to dry.
