Observed raw shell eggs stored above vegetables in walk in cooler. Observed raw chicken stored above raw beef in walk in cooler. Food shall be protected from cross contamination by arranging each type of food in equipment so that cross contamination of one type with another is prevented. COS by rearranging food items.

Observed multiple prepped meats stored in walk in cooler for two days without a date mark. Observed fried chicken wings stored in reach in cooler dated prepped on January 18th and 19th. Time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. COS: Raw meats in walk in were date marked and chicken wings in reach in were discarded.

Observed no written notification of the presence of major food allergens. The permit holder shall notify consumers by written notification of the presence of major food allergens as an ingredient in unpackaged food items that are served or sold to the consumer. PIC must post written notification of all major food allergens served in the facility.
