Observed employee drink from a bottle in area between pizza prep line and sandwich prep line. Observed open drink can stored on shelf above sandwich prep line. Corrected on site by moving drinks to front area.
Employees should only drink from cups with lids and straws in kitchen area.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed employee portioning out pizza dough wearing no hair restraint. Employees handling food should have hair restrained with a hat hair net or other suitable restraint.
Corrected on site by employee going out to car to get hat.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of food residue, dust, and grease on equipment throughout facility.
Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris/residue on floors and coving throughout kitchen. Observed accumulation of dust and debris under counter at front where powerades and insulated delivery bags are stored.
Observed water damaged ceiling tiles in dry storage area. This room should have smooth, non-porous, water resistant ceiling tiles because this room is being also being used to prepare pizza dough. Any tiles that are replaced should be replaced with appropriate water resistant tiles.
Observed damage to drywall behind prep table in dry storage/ dough room. The walls in this room should be finished with FRP panels as this is being used for food prep.
Observed opening in wall next to dough mixer that appears to be an old power or data outlet. This should patched or covered to prevent insect harborage.
Observed ceiling grid sagging in kitchen.
Observed damage to drywall around handwashing sink and walk-in cooler door. When this is repaired they should be finished with FRP panels.
