Observed that facility was operating while hot water generation system is broken. Hot water is not available at the facility until repairs are made. CA: Facility must have hot water generation system repaired as soon as possible. Facility will need to have in writing a risk control plan in order to continue operation until unit is repaired.

Observed mops and brooms not being stored at least 6 inches off of floor. CA: All cleaning items such as mops/brooms cannot be stored in mop bucket , they must be mounted to the wall when not in use. Spoke to PIC regarding proper storage of cleaning equipment.

Observed test strips that were expired, dated to expire on Sep 1, 2024 today is Dec 19, 2024. CA: PIC will need to order new test strips for testing sanitizing solutions as soon as possible.

In manual warewashing operations, a temperature measuring device shall be provided and readily accessible for frequently measuring the washing and sanitizing temperatures. Pf
In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. Pf

Observed TCS food, milk in clear glasses, being held in a reach in cooler at temps above 41 degrees Fahrenheit. This is a repeat of last inspection. COS PIC discarded items from RIC. CA: PIC & I spoke about storing items in RIC. Milk and dairy products are TCS foods and must remain at temps that are 41 degrees Fahrenheit or below.
511-6-1.04(6)(f) - Time/Temperature Control for Safety; Cold Holding (P) (f) Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature and for a time specified in subsection (5)(a)2 of this Rule and reheated using the same temperature and time conditions as cooking may be held at a temperature of 130°F (54°C) or above.
