Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several items in the walk in cooler and the reach in cooler without date marks. CA: All TCS foods shall be date marked after cooked before going in the cooler if held over night.
