-Observed container of raw beef over RTE foods in reach in cooler. -CA- Raw animal products shall be stored below RTE foods to prevent contamination. -COS- Manager placed raw foods under RTE foods.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
-Observed multiple containers of cole slaw and other TCS foods with no date marks. -CA- All TCS foods shall have date markings -COS- Facility manager placed date marks on foods.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
-Observed multiple scoops with handles stored in food products -CA- Scoops shall have a handle and shall be stored out of the food products. -COS, manager placed all scoops in 3 compartment sink to be washed, rinsed, and sanitized. Manager informed employees about proper scoop storage.
