Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
2% Milk, Doro wat chicken, beef, rice, hard boiled egg etc. not maintained at 41F or lower in walk-in cooler (WIC); Ambient air was also about 52F. COS, All TCS foods discarded upon request by PIC.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Prepared TCS foods (collard greens, coconut rice, veggie medley, chopped cooked chicken, boiled eggs, etc.) not properly marked with preparation or disposal date. COS, TCS foods were discarded by PIC.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(k) - controlling pests (pf, c)
Observed several fruit flies throughout facility. A trail ants (along coving) also observed in middle section of kitchen where microwave is located.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Lids and surrounding borders of steam table observed with food particles, WIC shelves observed with build-up, under cooking equipment with black soot and build-up. Please detail clean areas and send pictures verifying corrected in a timely manner to Bernotta.linder@dph.ga.gov
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(d) - cleaning ventilation system, nuisance & discharge prohibition, cleaned in way not to cause contamination or create a public health hazard (c)
Ventilation filters observed with grease buildup. Needs cleaning in between servicing. Send verification once ventilation system has been serviced to Bernotta.linder@dph.ga.gov
