6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
No consistent date marking procedure, a few items marked. Deli meats (roast beef, ham, turkey, salami), pizza sauce, penne pasta, alfredo sauce, shredded lettuce observed without preparation or disposal date. COS, Roast beef discarded and other items were marked with the preparation date by PIC upon request.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(l) - removing dead or trapped birds, insects, rodents, and other pest (c)
Observed dead roaches and black rodent droppings in facility. Must be removed & cleaned. Notify Health Department once cleaning has been done.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed interior of pizza prep top cooler soiled with accumulation of food residue, sandwich cooler with dried food residue, grease accumulated between cooking equipment. Detail clean nonfood contact surfaces and send verification to Bernotta.Linder@dph.ga.gov in timely manner.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(n) - maintaining premises, free of unnecessary items/litter (c)
Main kitchen observed with old unused equipment and other items no longer beneficial to establishment. Remove any equipment or other items no longer needed for restaurant.
