6-1A - proper cold holding temperatures

Observed improper cold hold temps in the Walk-in-cooler. Foods were supposedly put in cooler yesterday (date marked 3/12). COS: Foods discarded. Walk-in-cooler appears to be cooling properly as the ambient temperature is around 39f and the other foods checked were 40f. Verify cooling procedures and make sure products are stored in cooling in a timely manner.
