6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
-Observed Marinara and Alfredo Sauce not hot holding at 135F or above in the steam table of the front service area near the salad buffet prep top cooler. Marinara was around 112F-129F and Alfredo Sauce was 128F-132F. Marinara was noted on the previous inspection. Both Sauces were doubled pan with a small amount of water in the second pan. *COS, Marinara and Alfredo were reheated in the oven greater than 165F.
16C - sewage and waste water properly disposed

-Observed condensation leak at condenser unit in the walk in cooler in the facility. Drainage was leaking on saran wrap/inside Nacho Cheese Sauce. -Observed leak at pipe at the 3 compartment sink in the rear kitchen area of the facility. *CTM, Have leaks repaired and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.

-Observed rear kitchen area near dough prep area with large amounts of standing water. Was noted previous inspection. *CTM, Rectify issue and send documentation to Kristen.Tyler @dph.ga.gov within 72hrs.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
-Observed gasket seal areas of pizza prep top cooler and salad bar prep top/reach in cooler in the front service and pizza prep area of the kitchen with white fuzzy mold growth and debris. -Observed shelving in walk in cooler of the facility with accumulations of old food debris. *Observed inside of salad bar reach in cooler and pizza prep top cooler in need of cleaning to food debris. *CTM conduct general cleaning of listed areas and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.
