Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
-Observed heat sanitizing dishwasher in front service area of the kitchen unable to reach minimum required temperature for sanitizing. *CA: All heat sanitizing dish washers must reach minimum required temperatures for sanitizing. *CTM, Have dish machine serviced and send documentation to Kristen.Tyler@dph.ga.gov within 72hrs.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
-Observed 2 cases of half and half creamer stored in the walk in cooler of the facility with expired date marking (1/26 & 2/21/26). -Observed case of whipping cream canisters stored in the walk in cooler of the facility with expired date marking of 3/3/26. 1 can of whipping cream with same date marking observed in reach in cooler in front service area containing cinnamon and individual apple juices. CA: All TCS foods that are labeled keep refrigerated must be discarded by manufacturers expiration or sell by date. *COS, Food items were discarded by PIC upon request.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
-Observed 2 Quat Sanitizers stored in the front service area of the kitchen with chemical concentrations too low around 0ppm. *CA: All wiping cloth quaternary ammonium compound sanitizing solution must be at required proper minimum strength. *COS, Quat Solutions were discarded and refreshed within proper concentrations by PIC.
